Ingredients
- SOUP BASE:
- 3 cups chicken stock
- 2 oz shrimp shells
- 1 tsp vegetable oil
- TOM YUM NOODLE SOUP:
- 2 cups soup base
- 1 tbsp tom yum paste
- 1 tsp Our Thai Oboy Sauce
- 3 tbsp coconut milk
- 1 tbsp lemongrass
- 2 tbsp galangal
- 3 lime leaves
- 1/8 tsp sugar
- 1/4 tsp fish sauce
- 6 oz rice noodles
- 2 oz tomato
- 2 oz mushroom
- 1/4 cup beansprouts
- 1/2 lime
Instructions
- Soak rice noodle sticks in warm water for 1 hour.
- Soup base: Sautee shrimp shells with oil for 1 minute . Add chicken stock and simmer for 5 minutes. Drain and discard shells.
- Bring soup base to a boil. Add tom yum paste, Our Thai Cook @ Home Oboy sauce, coconut milk, galangal, lime leaves, lemongrass. Bring to a boil for 1 minute. Add sugar and fish sauce to taste.
- Add tomato, mushroom, onions and rice noodles. Simmer for 1 minute to soften noodles and cook shrimp
- Add beansprouts and lime.
